Jeremy's story
My name is Jeremy, I am a first generation American from Luxembourg City. I was born in Chicago, Illinois and when I was 2 weeks old my mother and I moved back to her home town of Luxembourg City, Luxembourg. I spent the next 12 years wondering what my birth country was like and one summer asked my mother I could travel back to Chicago to visit my father. Being the amazing person she is, she agreed and sent me on a flight back to Chicago. Not speaking a word of English I still remember the visceral experience of coming down the stairs of O'hare international airport and thinking 'I am home'. I called my mother 4 weeks later and with the brashness of a 12 year old proclaimed that I was not coming home. She dropped everything and picked up her life to move back to America and give our family another try.
My mother got remarried to my father and they planned on rebuilding their lives together. Unfortunately life had other plans. When I was 16 years old my father fell ill with heart failure and colon cancer, which took his life within 6 months. During this time my mother and I started on a food as medicine path that eventually became our life's work.
