Vasquez's story

Growing up in Ecuador, in a community rich with traditional values, especially regarding our relationship with food, I learned the importance of what we eat. This, combined with my family’s entrepreneurial background, taught me the values of hard work and innovation. In 2017, I moved to the U.S., initially planning to learn English and then return to Ecuador. However, the opportunities in the U.S. food industry quickly caught my attention. I founded Full of Beans, realizing the difficulty of incorporating bean base protein into daily diets. Later, my co-founder, also from Ecuador with a background in tennis and fitness, joined me. Together, our mission is to make people’s daily dose of beans effortless, offering healthy and nutritious bean-based products for breakfast and snacks.

After coming to the U.S., I have learned and achieved many milestones. I finished my English studies and obtained a degree in Food and Sustainability. While at school, I began to work on my business idea and launched it a month before graduating. This led me to win a scholarship for a Food Product Development program at Cornell University, which was a significant opportunity. Our product has been recognized at places like CUNY and Cornell University, and with a lot of sweat we won the Shelfie Award 2023 in the Breakfast category. Transitioning from learning a new language to starting a business has shown me that there is always room to learn and grow.

In the future, I want to expand Full of Beans by adding more bean-based products. Beans are not just good for our health; they are also beneficial for our planet. I also aim to continue learning from running my business. As an immigrant, I hope to use what I've learned to help others who are striving to succeed in a new place.
