Ninochka's story

Hello Worldwide Family! I own a restaurant with my husband Celso, Don Gil, "Cocina Jíbara." We were both born and raised in Puerto Rico and had extensive experience in restaurants and agriculture.

I grew up between Guaynabo and the countryside of Utuado. I learned to work in the restaurant industry in the city with my mother. With my grandmother, the love of the countryside, planting, and animals. This motivated me to study agriculture.

Celso was born and raised in the south of P.R., Ponce. Since he was young, he worked with his grandfather, Don Gilberto, who was in charge of the kitchen of several prestigious restaurants in his city. Celso was his grandfather's assistant and apprentice, and he carries Chef Gen in his veins.

Celso and I met in college. We both studied agriculture, where we took courses in food handling and production and business administration.

In 2020, in the midst of the CoVid19 pandemic, both restaurants where Celso worked as a chef closed. I was the only breadwinner in the household. That event motivated us to reinvent ourselves and create our business. After an intense market study, we realized that we needed to take the flavors of the kitchen to another level. In May 2020, Don Gil Cocina Jíbara was born. A small apartment kitchen with few tools but with a big heart, high quality, and freshness in our products, which proudly feature Puerto Rican flavor and do justice to grandfather Don Gil's name. Thanks to the support of our clientele / "family," we had to move to a food truck park to provide a better experience and have a physical space for them.
