Jose's story

I cook with my wife Ruth at My Grandfather's Cuisine. We are both from Puerto Rico. I have been working as a cook for over 24 years. To be short and quick, my Grandfather Don Samuel was the owner of La Fortaleza Restaurant in my hometown, Guayama, Puerto Rico. This establishment operated for more than 60 years, to be called one of the best restaurants in town. Ruth grew up in Ponce, Puerto Rico and she earned a college degree in Medical Billing. I met her when she worked as a Secretary for a Doctor in Guayama, my hometown. She loved to cook like myself. Back in 2000, I graduated from Culinary School in San Juan, Puerto Rico with a degree in Culinary Art; after that I started to work for a private company, Walt Disney World in Orlando, FL from small-size operations to large-scale operations including W Washington Hotel as a Banquet Cook.

We decided to move from Puerto Rico to Tucson, AZ, and open a food trailer to start cooking Puerto Rican food. After doing deep research we found that we have a great opportunity because here we have a big Puerto Rican community and we don’t have many competitors in the Tucson area. We have already invested more than $30,000 but with a Kiva loan for working capital we can open this food trailer.
