Since I was a kid, I longed to go home just for the smell of a warm kitchen, where food was not only served with spice, but with love. Deep in me, I knew that my love for the kitchen was lasting. La Resistencia is bound to bring people that warm home food feeling/experience where food is served with that same spice and love I learned to grow fond of.

Being a Mexican food aficionado prompted me to search for spices and textures that felt authentic to create Mexican food, I wanted to part from the commercialized delivery of these meals in my town. It was in that search that I learned that the spices and ways of cooking Mexican food were ones that resisted throughout time and cultural changes. I was moved then by the desire to honor the Mexican culture and culinary experience while bringing people closer to it.
