Heladio's story

I am a Mexican immigrant from Oaxaca, Mexico. I was born in an indigenous community where only dialects are spoken and at the age of 5, I learned to speak Spanish.
At a very young age, I started working to support myself and I could not have a childhood like other children.
I left my community when I was 15 years old to immigrate to the United States. My first job was washing dishes in a restaurant; it was a challenge since I had to face discrimination for not speaking English and the dialect native language instead.

With the desire to get ahead, I worked at different restaurants – Chinese, Japanese, Italian, and Mediterranean. Working with people with a different culture and language forced me to overpass the barrier of language, and led me to discover my passion for cooking. Being able to transmit the art of good food in my own food truck – it's always been my everyday goal.
