Veronica Elizabeth's story

Veronica Elizabeth and her family live in Portoviejo, a city affected by an earthquake on the 16th of April, 2016 and now by the Covid-19 pandemic. The city is rich in vegetable production, legumes and tropical fruit for domestic consumption.

Veronica Elizabeth along with her family, make and sell delicious “encebollados”, (a traditional Ecuadorian soup made with albacore fish or fresh tuna, cassava, onion, tomatoes, coriander and condiments). They also make lemon juices and sell colas, water and beer among other refreshing drinks.
