I was born and raised here in Columbia. I graduated culinary school in St. Louis in 2013, came back to town, and worked in several restaurants, imagining that I would be a chef someday after seeing food service from many angles. But baking-as-a-hobby became baking-as-a-career in 2018 when I opened Scott's and started selling at a local farmers' market. Now, with a brick-and-mortar location and several years of experience outfitting a kitchen; sourcing local and seasonal ingredients; and navigating maintenance, licensure, transportation, organic certification, and all the rest, I've learned the owner/operator side, as well. Learning it during the outbreak would not have been possible without cultivating resourcefulness as a special skill. Now I'm ready to take Scott's to the next level, by opening the doors to the retail side of the bakery, finally putting hours on the door, and expanding the menu to include a dozen new things I'd love to make for my customers. It may not have been the plan, five years ago, but I've learned to see and to make Scott's work as a conduit between the people of Columbia and the fresh, local, organic, and seasonal products of Missouri; and to love it as a way to do that.
Scott's was the first organic bakery in the state; I've milled my flour and operated without producing garbage from the beginning. I make everything fresh each morning; mill all my spices from whole, as needed; and get all my eggs, milk, cheese, onions, pumpkins, rice, corn, sorghum, and a dozen other things from less than fifty miles away. Scott’s has accomplished a lot, but it's small, and there's a lot of room to grow. I want to serve the neighborhood. And it would take surprisingly little to make that possible.

Business Description
Scott's uses local, organic ingredients to serve Columbia, MO, with sweets baked fresh every morning. I get up early every Saturday and sell a lot of cookies, cinnamon rolls, scones, and brownies at the Columbia Farmers' Market - my primary venue for as long as Scott's has been open. The response has been great - Scott's has developed a reputation for quality - and I've learned a lot from the feedback.
Scott's began as a much-smaller entity four years ago, when I began baking out of the unfinished basement of my family home, with a lot of secondhand equipment and just a few recipes. From the beginning, I've milled my flour and spices, used only local and organic ingredients, and operated Scott's waste-free - producing no garbage at all. Today, I'm proud to say that all of this is still true. The grinding mill has been upgraded with an electric motor to meet demand. Scott's has grown alongside the Columbia Farmers' Market and seen the availability of local ingredients increase proportionally, and now our food miles are lower than ever. I've expanded a home composting operation to continue consuming bakery food waste and found new outlets for recyclable materials.
To this day, all of Scott's equipment is second-hand, made in the USA, or both; and none of our ingredients or materiel come from Amazon, Walmart, or any company on the Forbes list of the world's 2000 largest businesses. Operating a bakery is challenging; doing so alone is very much so; and adhering to these standards, at times, makes operation nearly impossible. But Scott's, as an enterprise, would not be worth doing otherwise.
What is the purpose of this loan?
I want to put hours on the door at the bakery, and finally, begin serving customers there. This was the plan when Scott's moved into the space two years ago - as such, a service counter and display are already in place, and the kitchen space is enclosed with an attractive, glass barrier. But the original COVID outbreak stymied plans to open at that time, and, while Scott's has survived, it is not undamaged.
The bakery has recovered slowly, and preparations have been made for opening the shop in a kind of relaunch, scheduled for the beginning of 2022. A professionally-designed website; ad copy, business cards; signage for the shop doors and windows; and prospective employees are all ready to go. I am requesting this loan principally to make the purchases of ingredients and equipment, and investment in manhours, that will be necessary to increase production to meet the new demand that I hope for and expect.
The key elements funded by the loan will be additional labor (Scott's had never employed a second person, before); a mixer (also a first - for real); a small dish machine; a shipment of Green Cane Project sugar - the best and most eco-friendly sugar in the world (please look them up); and fees for organic certification and market memberships.

What is the disbursed date?

Potential for currency exchange loss is noted on every loan profile under the loan details:
"Yes" means the Lending Partner will cover any currency loss. Lenders will not bear losses due to currency fluctuation
"Partial" means that the Lending Partner has opted to cover losses only up to 10%. If the U.S. dollar appreciates more than 10% against the local currency, those losses will be passed onto lenders.
"No" means that the Lending Partner is not covering any currency losses and all losses will be passed onto lenders.
"N/A" means the Lending Partner disburses loans to borrowers in USD so their loans are not subject to any currency fluctuation.
Do Kiva borrowers pay any interest on their loans?
Our partners collect interest from borrowers because there are many operational expenses associated with microfinance in developing markets, especially in rural areas. Many of Kiva's Lending Partners also provide additional services alongside their loan products such as business training, financial literacy lessons, or health services.
Kiva will not partner with an organization that charges unreasonable interest rates, and we require Lending Partners to fully disclose their rates. In addition, we only partner with microfinance institutions and organizations that have a social mission to serve the poor, unbanked, and underserved.
