Drew's story

I was born and raised here in Columbia. I graduated culinary school in St. Louis in 2013, came back to town, and worked in several restaurants, imagining that I would be a chef someday after seeing food service from many angles. But baking-as-a-hobby became baking-as-a-career in 2018 when I opened Scott's and started selling at a local farmers' market. Now, with a brick-and-mortar location and several years of experience outfitting a kitchen; sourcing local and seasonal ingredients; and navigating maintenance, licensure, transportation, organic certification, and all the rest, I've learned the owner/operator side, as well. Learning it during the outbreak would not have been possible without cultivating resourcefulness as a special skill. Now I'm ready to take Scott's to the next level, by opening the doors to the retail side of the bakery, finally putting hours on the door, and expanding the menu to include a dozen new things I'd love to make for my customers. It may not have been the plan, five years ago, but I've learned to see and to make Scott's work as a conduit between the people of Columbia and the fresh, local, organic, and seasonal products of Missouri; and to love it as a way to do that.

Scott's was the first organic bakery in the state; I've milled my flour and operated without producing garbage from the beginning. I make everything fresh each morning; mill all my spices from whole, as needed; and get all my eggs, milk, cheese, onions, pumpkins, rice, corn, sorghum, and a dozen other things from less than fifty miles away. Scott’s has accomplished a lot, but it's small, and there's a lot of room to grow. I want to serve the neighborhood. And it would take surprisingly little to make that possible.
