I was unsure whether my weight gain and the decline of my health could be blamed on genetics, quitting ballet at age 7, or my discovery of Little Debbie. I only knew that as friends, we were getting taller and more active and social, I was becoming wider, more sedentary, and miserable.
My story is like so many others: at least one family member suffering from diabetes and close relatives diagnosed with a range of disorders including Multiple Sclerosis, sleep apnea, hypertension, and cancer. In the last few years, I have lost an aunt, and grandfather to cancer, and both grandmothers to dementia.
By the time I finished my first master’s program, I had attempted more diets than I had had years on the Earth and struggled with an eating disorder. I earned my first Master’s degree studying forensics and attempting to solve the mysteries of the dead, but recent life experiences have motivated me to instead solve the mysteries of the living; to help people live longer, healthier, and more fulfilling lives.
I have spent years learning the benefits (and downfalls) of myriad food, lifestyle, and health trends. The biggest takeaway is this: eat real food, and don't skimp on the flavor! My love for food and passion for nutrition led me to open BaKeto Bakery from my home. But ironically, I don't crave sweets, so I started experimenting with other keto-friendly foods. It's also vegetarian- and diabetic-friendly, low-carb, high-protein (great for bariatric diets as well), free of pork, eggs, and nuts. I operate from my home bakery (BaKeto Bakery) in Baltimore, MD. I have a website from which my customers order and an IG page where they can see pictures of all of the things I make (or want to make).
I decided to start this business to convince my family that cutting back on refined sugars, flours, and high-carb foods didn't mean that they had to eat blandness on a plate. I taught them how to substitute certain foods for others that wouldn't increase blood sugar or trigger weight gain. It made these conversations a lot easier than going into the pantry and declaring "everything in here is TOXIC!" Yes, I did that.
