Kristina J's story

My name is Kristina J. Addington, and I own V-Grits Food Company. We may have met at the V-Grits food truck, one of our catered dinners, or at a social event in Louisville. I believe that peace begins on our plate, and by simply eating plant-based, we can help animals, our health, and the environment.

In 2014 I was the first vegan chef to appear on and win Food Network’s culinary competition, Cutthroat Kitchen, and I used the prize money to launch the V-Grits Food Truck with my now-husband, Jeff Hennis. Attending and hosting over 150 events, the food truck has been a success and customers have become friends. We’ve also launched a vegan cheese line in grocery stores, as well as a line of prepared meals, and hosted “Vegan Supper Club” events locally. We also organize the annual Bluegrass VegFest, a festival celebrating vegan-friendly businesses with our most recent event hosting over 40 vendors and thousands of attendees who chipped in over $5,000 for local non-profit organizations.

Never one to be fully satisfied, we’re in the process of renovating a restaurant so that V-Grits can serve vegan meals to our community every day.

This loan is special because:

It will help the female entrepreneur expand her food truck into a full scale restaurant.
